I cut coffee from my diet for a few weeks ago, just to see how I’d feel. When I drank coffee, I’d only ever have around one cup a day. Mini Vegan Cheesecakes

I’ve developed a sweet tooth recently, and have been looking for some healthy, vegan desserts I can make from scratch. One of the desserts I miss the most since turning vegan is cheesecake! I used to absolute love cheesecake, and finding a recipe that replicates that same texture has been difficult. However, thanks to the Minimalist Baker, I have now hit the jackpot! When I came across her mini cheesecake recipe on the blog, I almost screamed! When I saw the ingredient list, I almost wept. Only 7 ingredients, all healthy, easy to source and free from refined sugar!

St David’s Day in Wales

Last Wednesday, March 1st, was St David’s Day. St David is the patron of Wales, and the Welsh celebrate his life, and everything about the Welsh culture on this day. I remember so many years of going to school dressed in a traditional Welsh costume on March 1st. You’ll still see kids looking adorable, dressed in the costume, going to school and performing in concerts, or festivals. The town where I live, Caernarfon, has a beautiful square which holds a lot of festivals, markets and concerts. On March 1st there was a huge celebration, which lasted all day. A a sea of red, green and white flags dominated the square, with bands playing, and children singing, with Caernarfon Castle prominent in the background.

Simple, Nutritious & Delicious Vegan Pancakes

I absolutely love Pancakes! I could eat them for breakfast everyday of the week. Topped with almond butter, coconut yoghurt, lemon and maple syrup, you can’t go wrong! Since Gwion and I were both home for Pancake day, we decided to make the most of it, and cook up a storm in the kitchen. We’re both vegan, and have made a variety of different vegan pancakes before, some good, some not so good.

Styling a Scarf

We took a short trip down to South Wales last week, and stopped in one of our favourite places, the Gower. The countryside stretches for miles and miles, with the coastline just visible in the far distance. I’ve been using Pinterest a lot lately for style inspiration, since I felt I owned so many items that I just wasn’t wearing. One of these items was this scarf, that I inherited from my grandmother. This scarf has been in my possession for a few years, but was never quite sure how to style it.

The Alpine Coffee Shop

Today we took a spin to Betws Y Coed, one of Wales’ quaintest villages. Betws Y Coed is right in the middle of Snowdonia’s National Park, and has become a hub for many mountaineers. In the hight of summer, this place is buzzing with tourists, so it’s nice to visit the place when it’s a little quieter. The place is packed full of independent shops and caffe’s, offering some of the best local crafts and produce. You’ll also find tons of great outdoor clothing shops there, selling amazing brands like Patagonia. It’s a fantastic spot to go walking, but if it’s a miserable day, like today, the Alpine coffee shop is a great alternative!
